Steak wrapped in the center is feta cheese and spinach. Then spaghetti squash, which I rubber down with Evoo, added some salt, pepper and garlic salt. Will be accompanied by some Spanish rice.

Going to make this tonight

Beer-Braised Chicken
Recipe courtesy Food Network Magazine

Ingredients
1/4 pound slab or thick-cut bacon, cut into 1/2-inch pieces
8 skinless, boneless chicken thighs (about 2 1/2 pounds)
Kosher salt and freshly ground pepper
All-purpose flour, for dredging
1 tablespoon extra-virgin olive oil
1 (12-ounce) bottle beer (preferably brown ale)
1 cup frozen pearl onions, thawed
1/2 pound small red-skinned new potatoes, halved
2 tablespoons whole-grain mustard
2 tablespoons packed dark brown sugar
4 sprigs fresh thyme
3 tablespoons chopped fresh parsley
Directions
Heat a large pot over medium-high heat. Add the bacon and cook until browned, about 5 minutes. Remove with a slotted spoon and transfer to a paper-towel-lined plate.

Season the chicken with salt and pepper and dredge in flour, shaking off the excess. Add the olive oil to the drippings in the pot. Add the chicken in batches and cook over medium-high heat until golden on the bottom, 6 to 7 minutes, then flip and sear the other side, about 1 minute.

Add the beer, onions, potatoes, mustard, sugar, thyme and 1 cup water to the pot and stir, making sure the chicken is fully submerged. Simmer until the chicken is cooked through, about 15 minutes. Discard the thyme and stir in the bacon and parsley.

Today's menu....

1 rack of baby back ribs - rubbed with rib rub spices - then cooked for 1 hr, taken out and rubbed with some sweet rays sweet and spicy bbq sauce
then done for another 15 mins, taken out and rubbed down with another douse of sweet rays bbq sauce and put back in for another 15 mins

Bushs baked beans, and some corn on the cob.

Cut up a small, diced, onion and mix it with Chardina wine. Then put it on low heat.

Mix 1 table spoon of butter and 1 table spoon of flour in a separate pan. You mix this until it is blended. After that you slowly add in 1 cup of chicken stock. Do this until the mixture is blended and creamy.

Once this is done you add in a quarter cup of mushrooms, 2 cloves of garlic minced, and half a green pepper diced (I omitted this since I'm not crazy about peppers). Simmer this until the veggies are soft. Remove from heat.

Then you cut a 1/2 cup of butter from a stick in small sizes into the veggie mixture. When they are fully melted you add on the onions.

Return this to a very low heat and blend.

Done.

Thanks. Using wine as a simmering liquid rather than a deglazer was new to me. It worked out well though.

The jalapeño poppers were a tad spicier than I thought they would be. I took out the seeds and washed them out. But the recipe does call for a smidge if chili powder on top, maybe I put too much. None the less tasty, next time more cheese stuffed in there and less chili powder.

Stuffed cabbage

Hamburger, sausage, mixed with cooked rice, bread crumbs, eggs, pepper, Garlic salt, Thyme, Worcester sauce. Wrapped in cabbage and converts with tomato sauce. Once cooked Parmesan cheese in too.

Spinach Tomato with chicken and shrimp pasta

I tried several times to upload picture of it, but it kept saying it couldn't determine the size the of the picture, fail.

Anyway so I took this recipe:
"Ingredients

1 (16 ounce) package cheese tortellini
1 (14.5 ounce) can diced tomatoes with garlic and onion
1 cup chopped fresh spinach
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 teaspoons dried basil
1 teaspoon minced garlic
2 tablespoons all-purpose flour
3/4 cup milk
3/4 cup heavy cream
1/4 cup grated Parmesan cheese
Directions

Bring a large pot of water to a boil. Add the tortellini, and cook until tender, about 10 minutes.
While you get the tortellini going, combine the tomatoes, spinach, salt, pepper, basil and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
In a medium bowl, whisk together the flour, milk and cream. Stir this mixture into the saucepan along with the Parmesan cheese. Heat through, then reduce heat to low, and simmer until thick, about 2 minutes.
Drain the tortellini, but do not rinse, then pour them into the saucepan with the sauce. Stir to coat, and serve."

And I changed a few things.

Instead of tortellini I used Fetuchinni. I added broccoli,chicken I chopped up add cooked along with some small shrimp. Anyone that likes a good pasta this is the real deal, was really awesome. Once we plated, we added some feta cheese on the top and it really finished it off.
